This month's crate

What is fermenting in the November crate

Every crate mixes something to drink, something to pack into a jar and one culture you can keep going for months. Brew times are a guide: a warm kitchen is quicker, a cool one slower.

Then bottle

Kombucha starter

A culture disc in starter liquid, a pouch of loose black tea and a brewing card for a 2-litre jar.

Grains you keep in fresh milk on the counter. Strain, feed and start the next jar the same day.

Sugar water and a little fruit turn into a light, fizzy drink. Flavour it on the second ferment.

Brine salt, garlic and a dried chilli mix for a jar of fresh peppers, plus a dropper bottle.

How it works

Four steps from crate to first fizz

No equipment to work out and no guessing at salt ratios.

1

Pick a box and rhythm

Small, Regular or Large, every 2, 4 or 8 weeks. Change both from your account later.

2

We pack your crate

Cultures travel in cool packs with a brewing card for each jar, weighed salt and spices.

3

Start your jars

Follow the calendar card: what to start on day one, what to taste, when to bottle.

4

Skip, pause or keep going

Away for a month? Skip the next crate before the cut-off (needs a subscriptions plugin).

The calendar card is the best part: I always know which jar needs me tonight.

I skipped two crates while the kombucha caught up, then picked it up again. Easy.

My first kraut actually worked. The pre-weighed salt takes the guessing away.

Placeholder

Food-safety notes on this page are sample placeholder text, not advice. Follow the guide that comes with each culture.

There is a white film on my brine. What now?

A thin, flat white film can form on vegetable ferments. Fuzzy, coloured or raised spots are a different thing: when in doubt, throw the batch out and start again (sample guidance).

My kombucha culture sank to the bottom.

That is normal: a new culture can sink, float or sit sideways. A fresh layer usually forms on the surface during the brew.

The milk kefir is thin and tastes of plain milk.

New grains often need a few feeds to settle. Keep the same milk-to-grain ratio and the same spot in the kitchen for a week.

The vegetables float above the brine.

Press them back under with the glass weight from the kit. Everything should stay below the liquid.

My kraut tastes too salty.

Taste again after a few more days. Next time, weigh the cabbage and use the salt amount from the card for that weight.

A bottle hissed loudly when I opened it.

Second-ferment bottles build up fizz. Open them over the sink, chill them first and check them every day (sample guidance).
